Sicilian salted ricotta is a cheese typical of the island tradition, artisanally prepared with pasteurized sheep’s milk and aged to enhance its flavor and texture. Unlike fresh ricotta, this version is salted and left to dry for a period ranging from 10 to 30 days, until it reaches a firm and flavorful paste, perfect for grating or enjoying in slices.

With a sweet and pleasant taste, our salted ricotta has a rough straw-colored rind (not edible) and a dry consistency that makes it a versatile ingredient for numerous culinary preparations: it is perfect on Pasta alla Norma, in salads, or as an accompaniment to grilled vegetables.

Ideal for:
