FRIED NOPALS
Ingredients:
– 4 fresh nopals
– Corn flour or batter flour
– Frying oil
– Salt and Pepper To Taste.
Instructions:
1. Clean the nopals by removing the thorns and outer skin. Cut them into strips or cubes, depending on your preference.
2. In a bowl, mix the cornmeal or batter flour with a bit of salt and pepper.
3. Dredge the nopal pieces in the flour mixture, making sure they are well coated on all sides.
4. Heat plenty of oil in a deep pan or frying pan.
5. When the oil is hot, add the nopal pieces and fry until golden brown and crispy, about 3-5 minutes.
6. Once fried, drain the nopals on absorbent paper to remove excess oil.
7. Serve fried nopals as a crunchy and tasty side dish, or add them to tacos, salads or other dishes of your choice.

NOPAL SALAD
Ingredients:
– 2 fresh nopals
– 4 eggs
– 1 small onion
– 1 red pepper
– Fresh cheese to taste (like queso fresco)
– Olive oil
– Salt and Pepper To Taste.
Instructions:
1. Clean the nopals by removing the thorns and outer skin. Cut them into thin strips.
2. Bring a pan of lightly salted water to a boil. Add the nopals and let them cook for about 5 minutes, until soft but still crunchy.
3. Drain them and let them cool.
4. In the meantime, cut the tomatoes into cubes and the onion into thin slices. If you want a spicy touch, chop fresh chili pepper.
5. In a large bowl, combine the cooked nopals, tomatoes, onion, and chili pepper (if using).
6. Season the salad with fresh lime juice, chopped cilantro, salt and pepper to taste.
7. Mix all the ingredients well and leave to rest in the refrigerator for at least 30 minutes before serving, so the flavors will blend better.

6. Meanwhile, beat the eggs in a bowl and add salt and pepper to taste.
7. Pour the beaten eggs into the pan over the cooked ingredients.
8. Spread the cream cheese evenly over the eggs.
9. Cook the omelette over medium-low heat until the eggs are fully cooked and the cheese is melted, about 8 to 10 minutes.
10. Once cooked, slide the omelette onto a serving plate and cut it into wedges.
