Characteristics: the Sicilian violet eggplant is a typical Sicilian production. It has an elongated or rounded shape of medium-large size externally with a thin and smooth skin and a purplish color, internally the pulp is white paste, straw yellow in color and smooth and thin skin. It is characterized by being very sweet.

Properties: The Sicilian violet aubergine is a source of vitamins including A, C and is widely used in diets as it is an excellent diuretic, draining agent and source of mineral salts and fibres. It is characterized by high digestibility and a high content of potassium and a moderate content of magnesium and calcium. It is one of the most consumed foods thanks to its rich nutritional and caloric properties.
