Timilia durum wheat flour is a lightly tumbled wholemeal flour. It contains many trace elements of wheat germ and bran; it has a high protein value and a low gluten index.

ANCIENT SICILIAN ORGANIC GRAINS AVAILABLE FOR ONLINE PURCHASE

The analysis carried out on gluten, contained in the integral fiber of ancient Sicilian grains, indicates an index lower than 50%, on a scale of values ​​ranging from 0 to 100. Such a low gluten index ensures greater tolerability and better digestibility. Furthermore, the whole wheat flour of ancient Sicilian grains contains all the germinated part of the wheat grain, for this reason it is very nutritious, with high health and antioxidant properties.
