Characteristics: In Sicily the Carob Tree produces carobs which are medium-large in size, elongated and dark brown in shape, it has a sweetish flavor similar to cocoa.

In cuisine: Sicilian carobs can be used in many ways, they often replace cocoa and being a gluten free product it can be used by celiacs and people allergic to flour and cocoa. They are eaten raw or their seeds, located at the own interior, are toasted. They are excellent for both sweet and savory dishes.

Properties: Sicilian carob, in addition to being very sweet, is characterized by being antioxidant and low in fat, and is also excellent for fighting flu, osteoporosis and allergies.
